Chicken with Shrimp and Clams

Hello, today I bring you a recipe Blog Cozinha pra 3 for another challenge.I like her blog.For me participating in any challenge of her page and an honor and wanted to thank the opportunity that it’s all your readers and blog friends. I chose this recipe because I love clams and found perfect combination, not regretted it because we love this dish.

Ingredients:

4 chicken breasts (I used 1 chicken boneless and skinless)
250g shrimp kernel (1kg used tiger shrimp shelled and cleaned)
1 kg of clams
1 tsp olive oil
1 tsp paprika
1 tsp salt
2dl white wine
2 cups water
1 teaspoon chillie
1 lemon
1 parsley fresh
2 tablespoons tomato paste
1 bay leaf

Place the clams in water with a little salt to open and dropping out of sand it has.
Cut the chicken into cubes, season with salt and paprika.
Heat the olive oil in a deep pan and add the chicken, bay leaf, let the chicken seal.
When you start getting dry add the white wine and water, tomato pulp, spicy, half the chopped parsley. Cook, when the browned chicken and the sauce is reduced, add the clams and shrimp, cook another 5/7 minutes.
Rectify the seasoning.
If necessary add a little white wine.

Serve with rice, in my case I served with fries the slices with wedges of lemon to squeeze on the table and the rest of the parsley over fresh and to give that flavor in seafood.

Carrot Risotto with Grilled Chicken Fillets and Mayonnaise Homemade

Hello, today I bring to blog a recipe a bit complicated but delicious recipe. At home and had mentioned in other post family W. love risotto and i cook many times and many ways, risotto has a wide range of flavors and combinations this was chosen by me.I hope you like and you try !!!

Ingredients:


1 cup of Arborio rice
½ small onion
½ small carrot
½ tomato
Seasoning (used salt and red pepper)
½ teaspoon paprika
½ tablet of chicken broth (I used only hot water)
1 slice of cheese (I used parmesan)
Boiling water
½ orange juice
green seasoning (I used fresh parsley)
½ cup white wine

Seasoning sliced chicken breast strips with salt, pepper vemelha or as you prefer. A low pan brown the onion in a little olive oil. Add the rice and stir until it becomes transperente. Place the wine and let reduce. Add the carrot and orange juice. Add chicken broth (I used the water fever), chopped tomatoes and the amount of water that is needed by baking. Put the paprika to give a color. And finish with green seasoning (I used parsley) and cheese. Mix well and serve. Adjust salt if necessary.
In a very hot grill, place chicken fillets grills.

For homemade mayonnaise:

Ingredients:

2 egg yolks
a pinch of sea salt
1 pinch of mustard
lemon juice q.s.
sunflower oil or other use olive oil qs
extra virgin olive oil q.s.

In the cup magic wand place the egg yolks, salt, mustard and lemon juice to taste. Turn on the blender and blend a little sauce.
Start by joining oil gently in wire and while beating until the mixture begins to emulsify and thicken. Then add oil in wire to emulsify mayonnaise completely, always while tinkering with the power wand. Remove the cup and put in a bowl. Take cold about 10 minutes before serving.

Loin Roast in the Oven

Hello again, challenge this month, which is the second time that I participate in the facebook group Cantinho das Cozinheiras this month was Ana Manuela Dias Jorge.It took me several days to pick a recipe but last Sunday I ended up doing this tenderloin with part of the recipe Ana create, she is cook in the pot but I did in the oven and she leave skin on the potato I took off.
I used almost all the ingredients of Ana recipe that she invented the so says the blog and I used as reference. I hope you like it, it was delicious !!!

Ingredients:
1 onion
2 tsp of olive oil
salt
100 ml tomato pulp
1 tsp Pepper
ginger
1kg potatoes new
250 ml white wine
2 cloves garlic
2 bay leaves

Beginning wash potatoes, peel them and left them in half.
Break off the onion and cover tray bottom.
Put meat in the center available chips and throw all the ingredients over the potatoes and meat.
Bake for 2 hours 180 degrees.
1:30 First use silver paper (foil) to cover the entire tray to protect the meat and potatoes without burning.
And very easy to practice and tasty.

Cod Stewed in the Oven

Hello today i bring blog tradicional Portuguese dish , very easy to do. Family W. love any dish contain cod and in my country there is 1000 ways to cook it. I hope you like it !!! Look a bit messy but comfort food never look good , the way our nannys cook. Well we are 2016 but dish is vintage piece from Portugal.Thanks for you visit !!!

Ingredients:

800 g of desalted Cod
1 red pepper
1 Yellow Bell Pepper
1 onion
100 ml water
4 tsp olive oil
4 large potatoes (1kg)
sweet peppers
paprika
2 bay leaves
3 cloves garlic
250 ml of white wine dry
salt
pepper (I used spicy)
1 sausage good quality(tradicional portuguese called alheira)
1 sweet potato (mine had 350g)
parsley
Black olives

Preheat the oven 180 ° C to heat.
Peel the potatoes and sweet and regular break the slices, wash the potatoes. Reserve.
Place all ingredients in a big tray,
use my clay tray from home Portugal I’m used to cook with.
Finely chop garlic, cut the peppers strips, peel onion and cut the slices.
Put onion in the bottom of the pan, pot or tray.
In the center put the cod and sausage over cod, potatoes around cod.
On top of all pour olive oil, wine, water, sweet peppers, paprika, bay leaves, garlic, salt
and spicy or pepper.
Place in the oven for 45 min./180ºC.
First half hour I used silver foil on top of the cod to not burn and then the other 15 minutes used to toast the potatoes.
At the end of the parsley and olives before serving.

Roasted Pork with white wine

Hello , this sunday i bring new recipe to blog , roasted sunday i choose pork this time and portuguese touch with good white wine. I like to use white wine in any roasted even in fish, the white wine always give delicious flavour on food .

Ingredients :

2 pork tenderloin
2 bay leaves
100ml of broth
300ml of white wine
2 or 3 c. olive oil
2 or 3 c. tomato paste soup
Salt and pepper

Pour the potatoes and the meat in a baking tray, season with the remaining ingredients and bake at 200 ° C until golden brown and bake.
In my oven takes about 60minutes.
Remove and serve with a salad or white rice.

I Marined the prok with wine, paprika, lemon, salt, pepper and bay leaves from the day before. With any meat i do this process but when is lamb, i wash whole piece of lamb with lemon and  leave 2 days to marinate.

Pumpkin Risotto with roasted chestnuts

Hello everyone here is more participation in the facebook group Dia um…Na cozinha In the kitchen, I took advantage and made this quite different risotto with pumpkin UK because here not because of the lack halloween and to not throw out the pumpkins and chestnuts and a delicacy very hard to find around here.
When a challenge arises I always try to look for and study well what I will do, I chose this
Gordon Ramsey recipe program and well known around here very old flame The F word. So I added nuts and already tell you that is delicious.

Ingredients :

medium pumpkin
2 tablespoons butter
4 cups risotto rice (i use arborio)
6 quarts salt water
2 minced shallots
1⁄2 tablespoon garlic (chopped)
2 ounces white wine
2 tablespoons mascarpone cheese
2 tablespoons parmesan cheese
1⁄2 cup Chestnuts (before 25min in oven)
salt and pepper
olive oil
chives fresh

Roughly chop pumpkin into small pieces.
Sweat in a sauté pan with whole butter until soft.
Transfer to a food processor and puree until smooth.
Return to a sauté pan and simmer until the liquid is dissolved and the puree is dry.
For the Risotto :4 cups risotto rice,salted water, 2 cups mixed chestnuts, cooked (roasted oven for 25min.).
Bring half the stock to a boil and season with salt. Boil the rice for 6 minutes or until al dente. Strain and transfer to a baking tray and cool.
To Finish.
Cooked risotto rice.
The remaining vegetable stock or salted water, Pumpkin Puree, 2 shallots minced, 1/2 tbsp chopped garlic, 2 oz white wine,2 tbsp mascarpone cheese,2 tbsp shredded parmesan cheese,-1/2 cup cooked chestnuts, Salt and pepper, Olive oil for sautéing.
Sweat the garlic and shallots with olive oil.
Add white wine and reduce until almost dry.
Add risotto rice and in small amounts add stock until rice is cooked.
Finish with the pumpkin puree, mascarpone, cooked chestnuts and season with salt and pepper.
Garnish with parmesan on top with chives cut into small pieces =)

World Pasta Day

Today is Sunday , ‪#Worldpastaday . Food historians believe that lasagna is one of the world’s oldest pastas, and was likely eaten by ancient Greeks and Romans. These long, flat noodles would have been easy to roll out and dry in the sun or bake in rudimentary ovens, and cheese was a mainstay in lasagna recipes even in these early days. So i bring recipe every house cook in my country Portugal , easy, simple and comforting food for October .

Ingredients :

1 skinless chicken (broken into small pieces)
500g beef
500g of cooked white beans (fava beans used)
2 mass cup fusilli
1 onion, chopped
2 ripe tomatoes
2 Carrots
1 cup white Wine
Water 4.5 dl
1 small cabbage (white)
olive oil
40g smoked bacon
2 cloves garlic
bay leaf,parsley
salt
piri-piri

Mince the onion and garlic coarsely and cut the carrots to thick slices. Sauté it with olive oil, tomatoes and bay leaf.
Cut the meat to small cubes and season with salt, when the stew is browned, add the meat, wine and 2.5 dl water.
Simmer for 30 minutes then cut the cabbage into strips and add to the meat.
Also add chicken, bell pepper pasta and smoked bacon, for another 20 minutes, do not forget to always check the water.
Add the dough and adding the remaining 2 dl water (preferably hot). True salt, chili pepper and cook, uncovered, 10 minutes more.
3 minutes before the end of the cooking the beans join and leave for 5 minutes.
